FLAVOR PROFILE
Our 68% spicy dark chocolate bar is our first exploration of the classical pairing of chilis and chocolate. For the spicy component, we used dried Korean red chili peppers, which has sweet, smokey, earthy, and fruity undertones with a gentle but growing spicy note on the finish. For the chocolate component, we went with a 68% dark chocolate to provide a balanced amount of sweetness.

ALLERGENS
While our equipment is cleaned between batches, our bars may contain trace amounts of dairy and tree nuts as the chocolate is manufactured on shared equipment that also processes dairy and tree nuts. Our chocolate products contain no soy or gluten.
BEAN TO BAR
By "bean to bar" we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans). We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await. Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier. Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
