VERY LOW LOW SUGAR - BUT NOT SUGAR FREE

Our goal is to always be as transparent as possible, which is the reason for the more descriptive label.  We did not set out to create a bar sweetened with both cane sugar and Allulose.  Our initial intention was to create a bar sweetened with just Allulose but we were operating on a bit of autopilot the day we put the cocoa nibs in the refiner and began the process of making this chocolate bar.  Instead of reaching for Allulose we reached for cane sugar and it was not until we were starting to put it in the refiner that we realized what we were doing.  The end result is a bar that has 2.6% percent cane sugar and 25% Allulose.  What this means is that in terms of the amount of sugar, it is the equivalent of 97% dark chocolate but because of the Allulose it has the sweetness a 59% dark milk chocolate.

FLAVOR PROFILE (What we taste)

For those familiar with our 66% dark caramelized milk chocolate bar, this a variation of that bar but is primarily sweetened with Allulose, and includes roasted and salted almonds and a touch of Madagascar vanilla bean powder to add some additional layers of flavor and texture. This is our spin on the classic dark milk chocolate.  This is a "dark" milk chocolate meaning that the percentage of cacao or chocolate is greater than 50%, which means that is not overly sweet.  It is a milk chocolate because it contains milk powder.  Our spin is to brown the milk powder, which caramelizes the sugars in the milk power.  The result is a very decadent bar with rich chocolate and caramel notes with just the right amount of sweetness to balance the flavors.

This bar contains dairy and tree nuts.  While our equipment is cleaned often and every time after processing chocolate products with allergens, it is possible that our chocolate products may still contain trace amounts of dairy and tree nuts as all of our chocolate is manufactured on the same equipment.  Our chocolate products are soy and gluten free.

BEAN TO BAR

By "bean to bar" we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans).  We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await.  Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier.  Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
